Chocolate Swirl Pumpkin Cheesecake

Ingredients
  • 18 Chocolate Sandwich Cookies
  • 8 ounces cream cheese, softened
  • ⅔ c. granulated sugar
  • ⅓ c. light brown sugar
  • Salt
  • 2 eggs
  • ⅓ c. sour cream
  • ⅓ c. heavy cream
  • 1 15-oz. can of pureed pumpkin
  • 1 tablespoon of pumpkin pie pieces
  • ½ c. dark chocolate chips
  • 3 tbsp. heavy cream for chocolate swirl
Instructions
  1. Preheat the oven to 300 degrees and line 18 muffin cups with liners.
  2. Place 1 whole cookie in the bottom of each cup.
  3. Beat cream cheese, sugars, and salt until smooth.
  4. Beat eggs in one at a time to combine.
  5. Beat in sour cream and heavy cream.
  6. Stir in pumpkin puree and pumpkin-pie spice.
  7. Divide amongst cookie paper cups.
  8. Melt chocolate and remaining heavy cream.
  9. Drizzle and swirl over each cup.
  10. Bake until the filling is set, 40 minutes or so.
  11. Cool completely.
