Cranberry & Chocolate Quinoa Granola Bars

When perusing Pinterest for Quinoa recipes, I stumbled across this fabulous one from Vanilla & Spice. Because I didn’t have all the ingredients on hand, I modified this recipe for what I had and for our own 
taste buds!




Cranberry & Chocolate Quinoa Granola Bars
Adapted from Vanilla & Spice

Dry
1.5 cups whole wheat flour
1 tsp cinnamon (LOVE cinnamon – I DUMPED it in!)
1 tsp salt
1/2 tsp baking powder
1/2 tsp baking soda


Wet
1 whole mashed banana
2/3 cup unsweetened applesauce
2 tbsp honey
2 tsp vanilla extract



Extras
1.5 cups cooked and cooled quinoa
1 cup rolled oats

1/2 cup dried cranberries

Handful of chocolate chips (mini or regular sized, I used semi-sweet)


Preheat oven to 375° and line a 13 x 9 pan with parchment paper (this is AMAZING for clean-up!)



Mix together dry ingredients in one bowl. Mix together wet ingredients in another.  Combine the two together in one large bowl (I used my Kitchen-Aid mixer which was beyond simple & quick! Fold in the “extras” until mixed well. Spread evenly into the prepared baking pan.



Bake for approximately 12 minutes or until toothpick comes out clean.

Makes 24 traditional granola-sized bars


The boys gobbled these up! They are healthy, filling (and cheaper) than your traditional store-bought granola bars. Delicious! Let me know if you make any of your own variations!
